Вкусный фоторецепт приготовления гуцульского баноша. Банош - душа гуцульской кухни. Банош является повседневным блюдом, которое часто появляется на столах Западной Украины и прилегающих районах Румынии. Готовят банош преимущественно мужчины. Ранее банош считался пищей бедных людей, а сегодня его можно найти в меню каждой калиби в Карпатах. Оно и не удивительно! Ведь банош имеет просто неповторимый вкус. Это каша из кукурузной муки, напоминает мамалыгу. Вместо сливок можно использовать жирную домашнюю сметану или молоко, получается почти так же, только следить нужно более тщательно, чтобы молоко не сбежало. А если вы не любите шкварки, их можно заменить на соус из белых грибов.

Ингредиенты

800 гр. сливок
3/4 стакана крупы кукурузной
200 гр. брынзы (лучше овечий)
200 гр. свиной грудинки
1 ст.л. вершкового масла
1 щепка соли
1 щепка сахара

Способ приготовления

Сливки довести до кипения. Добавить щепотку сахара и соли. С солью нужно не переборщить, поскольку брынза достаточно соленая.
Затем в сливки всыпать кукурузную крупу тонкой струей (принцип приготовления манной каши). Крупа должна быть достаточно мелкого помола (немного крупнее манки).
Варить на маленьком огне до загустения, постоянно помешивая (принцип приготовления манки). Если нужно, то можно добавить чуточку воды. Приблизительно кашу нужно варить 10-15 минут. Далее выключить огонь. Добавить сливочного масла и накрыть крышкой.
Грудинку нарезать маленькими полосками и обжарить на сковородке. Брынзу натереть на крупной терке. Банош выложить в горшочек.
Засыпать брынзой. Можно поверх брынзы выложить жареную грудинку, но лучше положить ее рядом на тарелочку.
